Chinese Chicken Friedrice


Ingredients

1) 10 small pieces of chicken

2) 6 eggs

3) Coriander leaves-(1 cup)

4) Celery Leaves-(1cup)

5) 3 cup basmathi rice or white rice

6) 2 big capsicums chopped

7) 2 carrot and cabbage (Chopped into thin long pieces)

8) 1tbsp tomato sauce,chilly sauce and soya sauce

9) 3 big onions chopped

10) 1 tsp of turmeric powder and pepper

11) salt to taste

Cooking Method

a) Chicken shredding & frying

i) Firstly cook the chicken with 1tsp of pepper,1tsp of turmeric powder,1tsp salt, sufficient amount of water in a pressure cooker.

ii) When its cooked well cool it and shred it into small pieces and remove the bones.

iii)Fry the shreded chicken pieces with 1tbsp of oil and keep it aside.

b) Scrambling of eggs

i) Beat the eggs well in a bowl with a pinch of salt.

ii) Prepare the egg scramble by pouring into a frying pan and scarmbling.

iii)Keep it aside.

c) Sauting of vegetables with Onion

i) Saute the chopped onions first in a frying pan.

ii) Then saute the chopped capsicum,cabbage and carrot pieces along with it.

iii) saute with the above sauces (in ingredients) till the mix become tender.

iv) keep it aside.

d) Cooking Rice

i) Boil water in a vessel

ii) When it boils put three cups of washed rice in it.

iii) When it is cooked, Strain it and keep it aside.

e) Mixing the above prepared with rice

i) Finally start the mixing.

ii) Take equal quantity of rice, scrambled eggs, vegetable mix and shredded chicken in a bigger bowl.

iii) Mix the contents well with little of chopped coriander and celery leaves.

iv) Continue this till the whole of the above contents is finished

v) Serve hot.
This will be sufficient for 10 sevings.
